Simple Bacon and Spinach Quiche Recipe

This delicious bacon and spinach quiche is a simple recipe to prepare for a special occasions or just family breakfast. Using a homemade pie crust is a must if you have the extra time.

Quiche is such a versatile recipe and can be adapted to anyones taste. I just so happen to think this quiche recipe is absolutely delicious just the way it is but there are many other ingredients you can add to change things up. Mushrooms, onions, bell peppers and squash are all great additions to this simple bacon and spinach quiche recipe. There are also many different cheeses that can be swapped in or combined together as well.

What is Quiche?

There are many types of egg breakfast casseroles but quiche is a little different. It is lighter and creamier and uses less eggs and a lot more cheese, while egg casseroles typically are more dense using a lot of eggs and less cheese. Quiche feels like more of a fancy dish to serve while egg breakfast casserole is more about filling hungry bellies.

Does a quiche crust need to be pre baked?

Many recipes recommend pre baking or blind baking quiche crust because they say it makes the crust soggy. I have never done that and my crust has never been soggy. It saves time not pre baking as well.

Do I need to cook the vegetable before baking?

This recipe only uses frozen spinach as the vegetable. Because frozen spinach has been blanched before freezing (quick cooked in water), it doesn’t need to be cooked again before adding it to the quiche. What I love about this is I can just toss everything into the mixer and mix it up and pour it directly into the unbaked crust.

However, if using any other types of vegetables they will need to be cooked ahead of time on the stove. Because vegetables do contain a lot of water and it is important to cook or they will make your quiche soggy.

Can you make quiche ahead of time?

Quiche is a great dish to make ahead of time and reheats nicely. It can be stored in the refrigerator 5 days. To reheat, cover the quiche with aluminum foil and put into the oven at 325 degrees for 20 minutes.

Can you freeze quiche?

Yes. Quiche can be put in the freezer in a large freezer bag or wrapped tightly in plastic wrap. This will keep well in the freezer for several months. When ready to use, defrost in the refrigerator. Once defrosted, cover with aluminum foil and reheat in a 325 degree oven for 20 minutes.

Supplies Needed

  • Baking sheet with sides or oven safe dish for cooking the bacon
  • Large mixing bowl
  • Whisk, hand or stand mixer
  • Pie dish

Ingredients

  • 8 ounces frozen spinach (or light cooked fresh spinach)
  • 8 ounces cheddar cheese
  • 1/2 pound bacon
  • 4 eggs
  • 1 cup whole milk
  • 2 tablespoons all purpose flour
  • Homemade pie crust (or pre-made store bought pie crust)

Instructions

Prepare the pie crust. If using a homemade pie crust, be sure to prepare it ahead of time as it ideally needs time to chill in the refrigerator before being rolled out. Here is an absolutely delicious pie crust recipe to try. Roll out pie dough and place into pie pan.

Cook up 1/2 pound of bacon. The easiest way to do this is to place bacon strips on a baking sheet with sides and place into a cold oven at 425 degrees for 13-15 minutes. Once crispy, move bacon to a plate lined with paper towels to cool. Then cut up bacon into bite size bits.

Reduce oven temperature down to 350 degrees.

To a large mixing bowl add frozen spinach, cheddar cheese, bacon bits, eggs, milk, and flour. Using a whisk, a handheld or stand mixer, whisk together until all the ingredients are thoroughly combined.

Pour the quiche batter into a homemade pie crust (or a store bought pie crust) and bake at 350 degrees for 45 minutes – 1 hour. The quiche is fully cooked when the center is firm to the touch. If the crust starts to get dark, add aluminum foil to cover the edges of the crust and return quiche to the oven to finish baking.

Allow the quiche to cool for about 10 minutes before cutting and serving. This tastes wonderful hot or at room temperature.
