Ingredients

  • 1 homemade double crust recipe or store bought
  • 6-8 apples cored approximately 7 cups
  • 1 1/2 teaspoon cinnamon
  • 4 tablespoons butter
  • 2 tablespoons all purpose flour
  • 3/4 cup sugar (1/4 brown?)
  • 1/4 cup water
  • 1 egg + 1 tablespoon water for egg wash or 2 tablespoons milk for milk wash

Instructions

  1. Start by making the pie crust recipe per instructions and chilling in the fridge while making the filling. I like to use my flaky einkorn pie crust recipe. Any favorite crust recipe will do. Preheat oven to 425°F.

  2. In a pot on the stove, melt butter over medium heat. Whisk in 2 tablespoons of flour and continue to cook for about 1 minutes. Then add 1/4 cup of water, 3/4 cup of sugar and 1 1/2 teaspoon of cinnamon and bring to a boil. Reduce heat and simmer for 3 minutes to thicken. Remove from heat and set aside.

  3. Cut apples into thin slices and toss with the butter/sugar sauce.

  4. Roll out pie crust in about 12 inches. Transfer the crust to pie plate. Add the apples and spread evenly.

  5. Roll the top pie crust to around 10-11 inches. Cut 10 strips about 1-1 1/2 inches thick for lettuce crust. Carefully weave the strips back and forth over the top of the pie. Or transfer whole crust to pie for a solid surface crust. Be sure to cut slits into the solid crust to allow air to escape while baking.

  6. To make an egg wash mix 1 egg with 1 tablespoon of water and beat together. Next using a basting brush, apply the egg wash to the entire

  7. Bake apple pie in oven 425°F (212°C) for 15 minutes. Reduce heat to 375°F (190°C) and bake for 45 minutes until apples are bubbling. Remove from oven and rest room temperature for 1 hour.

Recipe Notes

  • To transfer crust: roll the crust onto rolling pin and unroll onto the pie plate or fold crust into quarters and then unfold in the pie plate.
  • If crust starts to burn cover edges of crust with some aluminum foil.
  • Place foil or baking sheet on bottom of oven to catch any potential drippings that might bubble over during baking.
