Easy Frittata Recipe with Turkey Sausage and Spinach

Enjoy this healthy turkey sausage and spinach frittata. This recipe is easy to whip together for breakfast, lunch or dinner. And it makes a lovely presentation when placed on the dining table.

Ingredients

  • 1/2 lb ground turkey
  • 1/2 cup chopped onion
  • 1/8 tsp marjoram, pepper, oregano, nutmeg
  • 1/4 tsp dried basil, thyme, sage
  • 2 minced garlic use garlic press
  • 1/2 tsp sea salt
  • 2 tbsp butter unsalted
  • 8 eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 8 oz fresh baby spinach
  • salt and pepper

Instructions

  1. Preheat oven to 350 degrees.

  2. Make the Sausage:

    Melt butter in cast iron skillet (or another stove to oven safe pan). Sautés onions in butter for a few minutes then add ground turkey. 

    While turkey is cooking add all herbs and seasoning (marjoram, pepper, oregano, nutmeg, dried basil, thyme, sage, garlic cloves and salt). Cook turkey sausage until no longer pink. 

  3. Make the Frittata:

    Next add fresh baby spinach to the skillet with the turkey. Place a lid on the skillet and let the spinach wilt for a few minutes, stirring occasionally. 

    In a separate bowl, mix eggs and milk and a pinch of salt and fresh cracked pepper.

    Once the spinach is just wilted, add the egg mixture right on top of the turkey and spinach. Then evenly sprinkle the cheese on top.

    Use a fork to slightly mix the eggs with the spinach and turkey. Don’t mix too much, just enough to let the eggs settle to the bottom of the pan. 

    Let the frittata cook for 2 minutes on medium low heat then transfer to the preheated oven and cook for 10-12 minutes. 

Recipe Notes

Tip: I usually make a whole pound of ground turkey sausage and save half the cooked sausage for later. If you cooked a whole pound of turkey, take out half and save in the fridge or freezer for later use before adding spinach to the pan.

Tip: Don’t over cook. Remember the frittata will continue to cook even after you remove them from the oven. Overcooked eggs can be rubbery.
