Simple Bacon and Spinach Quiche Recipe

This delicious bacon and spinach quiche is a simple recipe to prepare for a special occasions or just family breakfast. Using a homemade pie crust is a must if you have the extra time.

Ingredients

  • 8 ounces frozen spinach (or light cooked fresh spinach)
  • 8 ounces shredded cheddar cheese
  • 1/2 pound bacon
  • 4 large eggs
  • 1 cup whole milk
  • 2 tablespoons all purpose flour
  • 1 Homemade pie crust (or pre-made store bought pie crust)

Instructions

  1. Prepare the pie crust. If using a homemade pie crust, be sure to prepare it ahead of time as it ideally needs time to chill in the refrigerator before being rolled out. Here is an absolutely delicious pie crust recipe to try. Roll out pie dough and place into pie pan.

  2. Cook up 1/2 pound of bacon. The easiest way to do this is to place bacon strips on a baking sheet with sides and place into a cold oven at 425 degrees for 13-15 minutes. Once crispy, move bacon to a plate lined with paper towels to cool. Then cut up bacon in to bit size bits.

  3. Reduce oven temperature down to 350 degrees.

  4. To a large mixing bowl add frozen spinach, cheddar cheese, bacon bits, eggs, milk, and flour. Using a whisk, a handheld or stand mixer, whisk together until all the ingredients are thoroughly combined.

  5. Pour the quiche batter into a homemade pie crust (or a store bought pie crust) and bake at 350 degrees for 45 minutes - 1 hour. The quiche is fully cooked when the center is firm to the touch. If the crust starts to get dark, add aluminum foil to cover the edges of the crust and return quiche to the oven to finish baking.

  6. Allow the quiche to cool for about 10 minutes before cutting and serving. This taste wonderful hot or at room temperature.

  7. Leftovers should be covered tightly and stored in the refrigerator. Enjoy within 5 days. Leftover can be enjoyed cold or hot. To reheat leftovers, cover with aluminum foil and heat in 325 degree oven for 20 minutes or until hot.
