Easy Recipe for Sourdough Pancakes

Exploring the Versatility of Sourdough

I originally wanted to make a sourdough starter to bake delicious and nutritious bread at home. As I became more familiar with sourdough, I began to discover all the other many things you could make with it besides bread products; pancakes, waffles, flatbreads, crackers, crepes, etc.

Sourdough pancakes have become a staple meal at the breakfast table because they are easy to wipe together and I love that I can use up a bunch of sourdough starter in the process.

I’ve used active starter as well as discard from the fridge to make these pancakes. They come out good both ways and my kids gobble them up. I’ve made them with white flour as well as whole wheat. The whole wheat version makes a slightly denser but deliciously flavorful pancake and I love that they are more nutrient dense for my growing kids.

Ingredients Sourdough Pancakes

  • 2 cups sourdough starter (active is best but discard will work too)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 salt
  • 1 tablespoon maple syrup
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 tablespoons melted butter plus more for frying
  • optional add-ins: blueberries, cinnamon, chocolate chips or pumpkin puree with some pumpkin spices.

Enjoy this easy sourdough pancake recipe. It is such a flexible recipe, it can easily be tweaked to your preferences.

Feed Starter

The night before, add flour and water to your sourdough starter, making a pretty thick starter. The next day measure 2 cups of starter into a large mixing bowl to make these pancakes.

Exact measurements: These measurements will give you just the right about of sourdough to make sourdough pancakes.

  • 1 cup (240g) water or milk
  • 2 cups (260g) all-purpose flour (or whole wheat)
  • 1 tablespoon (30g) sourdough starter

Mix water, flour and starter in a mixing bowl and cover with a damp towel. Let rise over night and mix up pancakes the next morning.

Mix Up Batter

In the morning, to your bowl of thick sourdough starter, add baking soda and baking powder, salt, maple syrup, eggs, vanilla and melted butter. Mix together with a whisk until throughly combined.

Cook Pancakes

Preheat your cast iron pan. Once hot turn down your temperature to medium low. Add a bit of butter or oil to hot pan. Pour batter onto the hot pan and cook until bubbles start to rise to the top and the edges are slightly dry. Then flip pancake to other side and cook a minute or two longer.

Serve Pancakes

While traditionally pancakes are served with maple syrup on top, they can also be spiced up a bit by adding other toppings as well.

Topping Ideas:

  • Butter and maple syrup
  • Fresh fruit or homemade fruit syrup
  • Whipped cream
  • Peanut butter and honey, or another nut butter would work too.
  • Cinnamon

Tips:

If the batter is too thick, add a bit or water or milk to thin it out. If it is too thin, just add a bit more flour until you reach your desired consistency.

As the pancakes come off pan, add a small amount of butter to each pancake, it save the step of buttering them at the table.
